During this season of bookbags, homework, and sports, we all seem to just be keeping our heads above water. Coastal Homes Virginia has you covered with a quick and easy meal idea! The best part about it is you can prep this meal ahead of time, then freeze it for those nights life's challenges get in the way and you just need something super simple. Pizza Casserole is a quick four ingredient meal that is a real crowd pleaser in our homes. It's a throw and go meal, great for those nights where you need a meal to bring your family together around the table.
Ingredients 1 box of any noodle you have on hand (I used lasagne noodles that I broke apart) 25 ounces of pizza sauce 3 cups of water
1 6-ounce package of pepperoni
1 8-ounce back of Monterey Jack cheese
Optional seasoning ideas: salt, pepper, basil, or italian seasoning
Optional ingredients ideas: any toppings you love on pizza!
Instructions
Pre-heat oven to 425 degrees
Spray a baking dish with cooking spray (I opted for a disposable 9x13 foil pan to avoid dishes! These come in a 30 pack from Sam's Club for $9)
In the baking dish, stir together the uncooked pasta, sauce, water, and toppings
Cover with aluminum foil and bake for 25 minutes
Remove the casserole from the oven and place it on a temperature-resistant surface
Remove the aluminum foil and stir. The noodles should be almost done at this point.
Sprinkle on some more cheese and bake uncovered for 10 minutes (or until pasta is tender)
Enjoy your easy meal around the table!
This recipe can be adjusted with your family's favorite ingredients. I added peppers, cooked and chopped ground beef, black olives, and mushrooms to half to satisfy everyone's taste buds! This meal will work in your slow-cooker too; place the ingredients (minus cheese) inside and cook on low for 4 hours. Top with cheese at the end, and voila! Until next time...
